These cakes were vanilla sponges sanwiched with strawberry filling and decorated with buttercream, chocolate and fresh fruit. By the way, anybody notice that there’s an awful dearth of yummy strawberries in the market the past months? Most supermarkets carry these Egyptian berries that are not very juicy. I have seen the occassional batch from Korea but they are SO exorbitantly priced and I refuse to fork out so much without knowing if the fruit is actually much superior. A punnet of Korean strawberries (about 10-12 berries) costs something like $15+…. compared to the Egyptian berries which are about $3+.
This was decorated with a swiss meringue buttercream flavored with strawberry puree…. it gave the frosting a very pretty pale pink color
